Mexican Penne with Avocado
Ingredients
100g Wholemeal Penne
1 teaspoon rapeseed oil
1 orange pepper, deseeded and chopped into chunks
2 cloves of garlic
2 teaspoons of chilli powder
1 teaspoon ground coriander
1/2 teaspoon of cumin seeds
400g can of chopped tomatoes
1/2 lime, zest and juice
1 teaspoon of vegetable bouillon powder
1 avocado, stoned and chopped
1/2 lime, zest and juice
Handful of coriander, chopped, and extra to serve
Firstly cook the pasta in water for 10-12 minutes. At the same time heat the oil in a medium pan. Add the sliced onion and pepper and fry, stirring frequently for 10 minutes until golden. Stir in spices and garlic, then add the tomatoes, half a can of water, the corn and bouillon. Cover and simmer for 15 minutes.
Secondly, toss the avocado with the lime juice and the finely chopped onion.
Thirdly drain the penne and toss into the sauce with coriander. Spoon the pasta into bowls, top with the avocado and sprinkle the coriander leaves then serve.
