
Egg and Rocket Pizzas
Use seeded tortillas or wholemeal wraps as your pizza bases. A very quick and healthy snack or meal added with a egg will give it a protein boost.
10 minutes prep time and 15-20 minutes to cook.
Ingredients
2 seeded or wholemeal wraps
A little olive oil
1 roasted pepper
2 tomatoes
2 tablespoon chopped dill
2 tablespoon of tomato puree
2 tablespoon chopped parsley
2 eggs
65g of rocket
1/2 red onion, sliced thinly
First heat the oven to 200/180C fan/gas 6. Lay the tortillas on two baking sheets, brush sparingly with the olive oil then bake for 3 minutes. At the same time chop the pepper, and tomatoes and mix with the tomato purée. herbs and seasoning. Turn the tortillas over and spread with the tomato mixture, leaving the centre free from any large pieces of pepper of tomato.
Secondly,break a egg onto the centre then return to the oven for a further 10 minutes or until the egg is just set and the tortilla is crispy round the edges. Serve scattered with the rocket and onion. Enjoy!!!
