Mackerel Baked in Foil Recipe
Simple and easy to do
2 whole mackerel
1 lemon
4 fresh rosemary sprigs
2 garlic cloves, sliced
1 small onion thinly sliced
4 tablespoons cider or apple juice
boiled potatoes with skin on, sprinkled with parsley, to serve.

Pre heat oven to 200c/Gas6/fan oven 180c.
Place each fish on a large sheet of foil or baking paper on a baking tray.
Slice the lemon and place inside both fish alongside rosemary and garlic. Scatter the onion and pour two tablespoons of the cider or apple juice over both fish.
Wrap loosely around each fish to make a parcel and bake for 25 minutes. Serve with boiled potatoes and sprinkle with parsley. Approx 460 calories per serving, 37g protein, fat 31g, carbs 6g, fibre 1g
