Tasty Tuesday Recipe

Herby Baked Eggs

Fry light spray
1 small red onion
1 garlic clove
200g tin of plum tomatoes
1 tablespoon of parsley
1 tablespoon fresh coriander
1 tablespoon fresh
3 large eggs
Salt and pepper
Chop the onions, garlic, parsley, oregano and coriander finely.
Drain and chop the tomatoes.

Heat a few sprays of fry light in a medium sized frying pan and heat.
Add the garlic and onion for 4-5 minutes.

Stir in the fresh herbs and tomatoes and simmer for 10 minutes. Crack the eggs over the top of the mixture.

Cook for around 5 minutes on the job until cooked through. Season to taste and serve straight away
